  • Pavakai……………4
  • Tamarind………….lemon size
  • Red Chili………….6
  • Urad Dhal…………..3tbsp
  • Grated Coconut……½ cup
  • Turmeric Powder….¼ tsp
  • Cooked Tur Dhal….. 1cup
  • Mustard Seeds…..1tsp
  • Salt to taste


Method 

  • Wash and cut the pavakai into small pieces. 
  • Fry the chili, urad dhal with little oil and grind with coconut.
  • Take the tamarind juice adding water. 
  • Boil the pavakai with water. 
  • Add tamarind water, turmeric powder, and. Salt. 
  • When the pavakai is cooked add the coconut paste cooked dhal and let it boil.
  • Heat a pan with oil add mustard, curry leaves and urad dhal. 
  • When it becomes red, add to the pitla.

Grated Coconut……………..1/3 cup
Chopped Green Chili…………\2 tsp
Chopped Ginger …………….1 tsp
Salt to Taste
Mustard Seeds……………….1tsp
Urad Dhal……………………..2tsp
Curry Leaves…………………..few
Coconut Oil……………………2tsp

 
Method.
Cut the the both side of vazhakai and put them in boiled water.
When they change their color remove them.
Peel the skin and grate them..
Whip the coconut and chili and add this to the grated vazhakai. 
Heat a pan with coconut oil add mustard seeds , urad dhal and curry leaves. 
When the dhal turns its color add the vazakai podimas, coconut, ginger. 
Mix them well. Serve with sambar rice/ rasam rice.

  • Potato............................6
  • Red Pepper....................1
  • Red Chili Powder...........1tsp
  • Turmeric Powder............1/4 tsp

Method

  • Wash and cut the potato into big pieces. chop the pepper in long pieces. 
  • Heat a pan with 1 tsp oil, add mustard seeds and cumin seed and when the mustard splutters add the potato and pepper.(you can keep on microwave for 5 minutes and then fry) 
  • Add salt and turmeric powder. 
  • When the potatoes are cooked add chili powder. 
  • Very tasty, this curry goes with chapathi or sambar rice.

Method 
Chop the vegetables
.Heat a pan with oil add onion, dhudhi, celery garlic, chick peas tomato fry them for 5 minutes.
Add pepper and salt add water and cook for 5 more minutes 
Decorate with chopped scallion Serve hot.

Method

Mix maida and corn flour with cabbage, carrot, palak and potato.
Knead them together adding water into thick paste.
Make small balls and deep fry them in hot oil.
Heat a pan with oil ginger garlic,onion and fry them
Add chili paste, salt tomato ketch up and water.
Boil them adding pepper powder sugar and make a desired gravy. 
Add the fried balls into the gravy and boil 2 minutes. 
Vegetable hot garlic ready.
Serve with rice or chapathi.

Broccoli Florets.........1cup
Chopped Onion.........1/4 cup
Chopped.Potato....... 1/4 cup
Garlic.........................3pearls

Vegetable Stock..........3cups

Method

Heat a pan with two tsp olive oil add garlic and onion and fry them . 
Add potato and fry two more minutes. 
Then pour vegetable stock. 
Let it boil, add broccoli, salt and pepper.
After three minutes puree this. 
Take a bowl add this green colour broccoli soup and keep red pepper on the center and serve. 
Very healthy soup.

Method


  • Cut the chow chow into small pieces.
  • Heat a pan with 2 cups of water add the cut pieces, turmeric powder and chana dhal.
  • When the vegetable is cooked, add salt..
  • Grind coconut, jeera and chili into fine paste and add to the vegetable.
  • See that it should be thick. Mix well.
  • Heat a pan with 1tsp oil, ,add mustard seeds, urad dhal.
  • When the mustard splutters add to the curry.
  • This kootu is a tasty dish, eat with sambar/rasam rice or chapathis

Method


  • Cook the rice in a pressure cooker. 
  • Fry the chilli, dhals and,sesame seeds with little oil
  • and cool them then grind them with jaggery
  • Add oil to the rice and mix the ground powder and mix well . 
  • Add curry leaves.

Method


  • Wash ,chop the palak and cook the palak. 
  • Heat a tawa with oil and add garlic,
  • onion and tomatoes.Fry them
  • Grind the cooked palak and fried ingredients.
  • Heat a tawa with oil add cumin seeds, cut onions and green chilies.
  • Fry them for a minute.
  • Add chilies, dhania, salt,onions and ground mixture.Boil for a minute.
  • Mix panner cubes and mix well. 
  • Sprinkle garam masala.

  • Mix tomato, cooked dhal and palak turmeric powder.
  • Pour enough water. Boil them.

Dosa, Idli,Chutney and Mulakai Podi

Boiled rice..........3cups
Urad dhal.............1cup
Salt to taste

Method.
Soak rice and dal separately for 4 hours.
Grind and keep overnight to ferment. 
Next day make dosas in a dosa tawa or dosakal
Apply oil on the dosakal take a big spoon of batter spread evenly into big round and add oil all the sides. 
When one side is cooked turn the other side. 
When it becomes crispy remove from the dosakal
Serve hot with chutney or mulakaipodi.

Ingredients

Grated coconuts............1cup
Tamarind ......................1/2 tsp
Green chilli.....................4
Dalia(porikadalai )..........2tsp
Salt to taste
Curry leaves....................few
Ginger.................................small piece
Mustard seeds...............1tsp
Urad dhal...........................2tsp
Red chili..........................1

Method

Grind coconut, green chili, tamarind ,salt and dalia into a coarse paste. Heat a tawa with 1 tsp oil add dhal chilli curry leaves and mustard seeds. when it splutters add to the chutney.

Urad dhal...................,.........................1/2 cup
Chana dhal...........................................1/4 cup
Black til.(sesame seeds)...................3tbsp
Salt to taste
Hing..............................................1tsp


Method

Fry all ingredients with 2tsp oil till the dhals become red. 
When it becomes cold, grind them adding salt into powder.
Fry the sesame seeds(til) with out oil. 
Add this til and grind into coarse powder.
This is a good combination for dosa and idli
Add little oil with this powder when you eat dosa or idli.

Method
Soak both rice and dhal separately for 4 hours and grind separately into fine paste. Mix both add salt and keep it overnight.. Next day make idlis with the help of a idli vessal,Serve with coconut chutney.

For kids, we make kunju idlis(small idlis) They love the idlis and eat them.

Ingredients

Besan............................1cup
Rice flour......................1/2 cup
Ghee ..............................2 tsp
Chopped Cabbage........1cup
Red Chili Powder.........1tsp
Green Chili.Chopped)...1tsp
Asafoetida (hing).........1 pinch
Salt to taste

Method

Mix all ingredients . Add 1 cup of water to the mixed ingredients to make up the batter.
Heat up the oil till it is time to fry. Make small balls of the batter and deep fry. 
Place the vadas in a paper towel so as to remove excess oil.Serve with chutney.  
Vadas should be crisp.
Additional to the cabbage, you can also add diced carrots/green pepper/onions/spinach/cauliflower to this tasty recipe.

Method

Heat a pan and fry the chopped onion, red chili and green chili.
Grind the peanuts, tamarind salt and onions into a paste. 
Heat a pan with oil add mustard seeds curry leaves and 1 red chili. 
When it crackles add to the chutney.

Milk.....................................1/2 cup

Cardamom powder..............1/2 tsp
Almonds and cashew nuts..... 3tbsp

Method

Peel the carrots and grate them. Fry them with ghee. 
When it fried add milk, sugar and cook for 15 minutes . 
Fry the nuts in ghee and garnish the halwa
Sprinkle cardamom powder. Serve hot or cold

Powdered Sugar.....two and half cups
Warm Milk..............1tsp
Pistachio Nuts..........6
Saffron....................few


 



Method

Tie the yogurt in a muslin cloth and hang it for eight hours . 
Remove it add sugar ,salt and mix well till the sugar is dissolved
Sieve this dough through filter (Puran)to remove the lumps and smooth the shreekand.(You can use beater).
Soak the saffron in warm milk. 
Add saffron water,cardamom powder and powdered nuts and mix well.
